La Meringaie was born from a simple idea: to reinvent meringue with elegance, balance, and seasonal creativity. Founded in 2015 by Marie and Benoît, our first boutique opened on Rue de Lévis in the 17th arrondissement of Paris. It quickly became a neighborhood favorite, drawing in pastry lovers eager to discover a lighter, more refined take on meringue. Over the past decade, we’ve grown to four boutiques across Paris, all dedicated to celebrating the artistry of meringue. In that time, we’ve also published two cookbooks, sharing our passion for pavlovas and all things meringue with fellow baking enthusiasts. Today, as we celebrate 10 years since opening, our commitment to innovation and seasonal creativity remains at the heart of everything we do.

With 30% less sugar than traditional recipes, our pavlovas feature a crisp shell and soft, airy interior—the perfect base for fresh fruit and delicately whipped cream. Each pavlova is crafted to highlight the best seasonal flavors, changing throughout the year, and is named after a figure from the 18th century—Pélagie, Sidonie, Honorine—bringing a touch of history to every creation. Beyond pavlovas, our mastery of French, Swiss, and Italian meringue allows us to create light, elegant desserts that surprise and delight. Our meringues are balanced and nuanced, designed to elevate this classic into something truly special. Finally, our macarons draw inspiration from our pavlovas, reimagined with bold, unexpected flavors and a lighter, brighter twist.
