Since we opened our first shop at rue de Lévis on October 27, 2015, the pavlova has won over Paris… and our hearts. 4 shops, 2 books, and over a hundred sweet creations later, the adventure continues—still driven by our passion for meringue. And above all, thanks to you. For these ten wonderful years by your side, thank you from the bottom of our hearts!

October 27, 2025: 10 years already!

For ten years, pavlova has found its way into the hearts—and onto the plates—of Parisians!

When we opened our first shop in 2015, the bet was bold: to introduce pavlova, a light, fruity dessert with a crispy yet melting texture, still unknown in France. Originating from the other side of the world, pavlova is a tribute to the Russian ballerina Anna Pavlova, who was adored during her tour of Australia and New Zealand in the 1920s. But which of these two countries truly invented this sweet cloud? The mystery remains unsolved…

What is certain is that Marie and Benoît have made it their specialty, and in just ten years, La Meringaie has become the go-to place for pavlova in Paris! Their pavlova was even named the best by the show Très Très Bon in September 2025.

A story of entrepreneurship… as a family!

Behind La Meringaie are Marie and Benoît, a couple united by their love of pavlova… and adventure. Both dreamed of entrepreneurship, driven by a shared passion for pastry and an unapologetic sweet tooth. For Marie, pavlova is more than just a dessert: it’s her signature, a moment of celebration, an obvious choice. 

So, with Benoît, they decided to create their own, guided by three principles: a crispy yet soft meringue, tasty whipped cream, and fresh fruit. From the very first days, their adventure took on a family feel, and ten years later, the family has grown.

A new book for our 10th anniversary...

In April 2025, the year of La Meringaie's 10th anniversary, Marie Stoclet Bardon unveils her second book: “Pavlovas & Meringues – 50 Crispy, Chewy & Melt-in-Your-Mouth Recipes.”

Few ingredients, stunning results—but a technique that can sometimes feel intimidating. That’s where Marie becomes the fairy of meringues: step by step, she shares her tips, her photographed know-how, and her delicious recipes.

Page after page, readers discover the different types of meringue, piping techniques, and how to create pavlovas for every season. The book also features other exquisite meringue-based desserts—like vacherin, Mont-Blanc, fraisier, and merveilleux—as well as miniature treats like macarons and marshmallows… for moments of pure joy.

…The renovation of rue de Lévis…

This is where it all began... at 21 rue de Lévis. An address close to our hearts, the starting point of this slightly crazy meringue-filled adventure. Ten years later, it was time to give it, too, a fresh new start.

This summer 2025, La Meringaie’s historic boutique is getting a makeover. Brighter, more open, more delicious. The space has been entirely redesigned to welcome you even better, while staying true to the spirit of the house.
Our pavlovas and other delights are now showcased more beautifully than ever, and customers can enjoy watching the pavlovas being dressed up, in full transparency.

This renovation is also our way of celebrating 10 sweet years.
Because while meringue may be timeless, our desire to surprise you, to welcome you, and to delight you — that’s always evolving.

A La Meringaie Christmas like you’ve never tasted before!

Our soft 123 Pavlova meringue

In 2019, La Meringaie took a new step by launching 123 Pavlova, a range designed to make pavlova accessible to everyone. Available in over 300 outlets, including Monoprix and Grand Frais, our kit allows you to create a pavlova in just 5 minutes by simply adding whipped cream and fresh fruit.

The soft meringue, at the heart of this kit, is made from simple ingredients: whites egg, sugar, salt, vinegar, rice flour, and xanthan gum, for a light and melt-in-the-mouth texture. Less sweet than a traditional meringue, it provides the perfect base to enjoy seasonal variations.

With 123 Pavlova, we invite you to creativity and sharing. Everyone can personalize their pavlova according to their desires: red fruits in spring, citrus in winter, or chocolate topping for the more indulgent. This range embodies an even more friendly approach to pavlova, true to our values!
