When we discussed orangettes and citronnettes with our chocolatier, a former member of La Maison du Chocolat, we urged him to use a particular variety of peel that is extremely soft. It's a bit more complicated to produce, but the result is amazing.

The orange and lemon peels are cut into thin strips, candied, drained, and then coated in dark chocolate. A signature product of La Meringaie: the tenderness and aroma of the peels, combined with the chocolate’s slight bitterness.
