I know this pastry thanks to my grandmother, who told me about it many times. Later, I asked my pastry chef to make a Polonaise recipe, and together we adapted it and made this brioche a less sweet and lighter dessert.
Polonaise
Brioche soaked in passion fruit syrup, lime whipped cream, raspberry compote, and topped with Italian meringue.
Polonaise is a traditional French recipe created by pastry chefs of the time to use up their brioche from the day before. Served with lime whipped cream, fruit compote, and Italian meringue, we have revisited it in our own way: less sweet and lighter!
